Can you make sauerkraut without weights?
In a closed system like the FARMcurious Fermenting Set (or other airlock system) a weight is generally not needed because the airlock keeps the environment oxygen-free and safe from contamination of yeast and mold.
A fermentation weight could be something as simple as a bag full of water, a handful of food-safe stones or dedicated glass or porcelain weight that fit exactly in your jar. The job of these weights is to keep whatever is in the jar below the surface of the brine.
Bring sauerkraut and liquid slowly to a boil in a large kettle, stirring frequently. Remove from heat and fill jars rather firmly with sauerkraut and juices, leaving ½ inch of headspace. Wipe sealing edge of jars with a clean, damp paper towel. Add lids and tighten screw bands.
